What is the Base of our Cheezes?
For all meltable cheezes like Nozzarella, Munster, Havarti, Tuscany, Black Pepper-Truffle, Smoked Gouda, etc. we use organic soymilk from our own soymilk production.
The base for the fermented cheezes like Chevre, Blue Cheeze and Black Velvet is cashews.
The base for Feta and Gorgonzola is premium tofu.
The base for Cream Cheeze and Marinated Feta is a mix of cashews and tofu.
Are our cheezes Gluten-free?
Yes, all our cheeses are completely gluten-free.
Can you freeze our cheezes?
Yes, all our cheezes are freezable. Due to the water content of non-fermented cheezes the structure will change slightly through freezing but the taste will still be the same. Therefore, we suggest to only freeze the cheezes which you will melt on top of pizza or a grilled sandwich etc. But best is to consume our cheezes within one week.
Does our cheeze melt like dairy cheese?
Yes, our cheeze will melt and brown nicely. Though, vegan cheeze needs a slightly higher melting point. Best is to grate the cheeze, drizzle a little oil on top. Then cover with aluminium foil and put under high heat or leave it a bit longer in the grill or oven.
What’s the Shelf Life of our Cheezes and how to extend it?
Vegan cheezes release water the first days after production. Best is to absorb that water by wrapping the cheeze in kitchen paper and change it the first few days when wet. Store the dry cheeze in an airtight container and it has a life of around 10 days. The fermented Chevre has a shelf life of up to 2 months and develops a deeper flavor over time.
Why are we using plastic boxes for transporting the cheeze?
Our vegan cheezes are quite sensitive and fragile. Over the past years, we tried various packaging options. Our attempts to use banana leaves, paper boxes, woven baskets and wax wrapping paper were all sub-optimal. The cheezes ended up lasting less long, or the moisture would soak into the paper and make it sticky and tear. Long story short: The cheeze needs to be in a water-resistant, airtight container. The best solution for now seems to be to use plastic, as the cheeze stays fresh and the box can be reused.
Why do you use soymilk for the cheezes?
The chemical composition of soymilk and its ability to produce cheeze is closest to the one of dairy milk. It emulsifies like dairy milk and is therefore ideal to make vegan cheeze. Our soybeans are organic and locally sourced from Bali. Their farming is more sustainable and less expensive than other nuts, so we can offer our cheeze for a reasonable price.
Is soymilk good or bad for your health?
There is a lot of confusion and false information about soy out there. Many studies have shown that soy and soy milk is considered a very healthy choice, particularly as a nutrient-dense alternative to dairy. However, because soy contains isoflavones (a type of plant estrogen), it has been the subject of a lot of debate. Here is the breakdown of the current scientific consensus:
The “Good”: Why it’s beneficial
Complete Protein
Soy is one of the few plant-based sources that provides a “complete” protein profile, meaning it contains all nine essential amino acids your body can’t make on its own.
Heart Health
Unlike cow’s milk, soymilk is naturally cholesterol-free and low in saturated fat. Many studies suggest that replacing dairy with soy can help lower LDL (“bad”) cholesterol.
Nutrient-Dense
Most commercial soymilks are fortified with Calcium, Vitamin D, and B12, making them nutritionally comparable to dairy milk.
Isoflavones
These plant compounds have antioxidant properties and have been linked to a reduced risk of certain heart diseases.
The “Bad” (or things to watch out for)
Added Sugars
Many “Original” or “Vanilla” soymilks contain significant amounts of added cane sugar. Choosing “Unsweetened” is the best way to keep it healthy (at Oh Cheezes we don’t add any sugar)
Thyroid Interference
If you have a thyroid condition, high amounts of soy can sometimes interfere with how your body absorbs thyroid medication. It’s usually fine to consume, but it’s best to wait a few hours after taking your medication. Ask your doctor.
The Estrogen Myth
There was a long-standing fear that the phytoestrogens in soy could cause hormonal issues in men or increase breast cancer risk. Current research actually shows the opposite: moderate soy consumption may even be protective against certain types of cancer and does not negatively affect testosterone levels.
Therefore
Unless you have a specific soy allergy or a thyroid condition that requires strict monitoring, soymilk is a fantastic, heart-healthy option.
